Green Rooibos is a less common form of rooibos, developed primarily to rival the popularity of green tea. Typically while processing rooibos the leaf is oxidized and changes color to a deep red. In making Green Rooibos the leaf is baked and dried soon after it is harvested, thus maintaining the high level of polyphenols and flavonoids, which may help enhance the immune system. Flavor wise, it is slightly grassy, sweet, and light bodied. The aroma is bright and herbaceous, with a hint of fresh snow-pea sweetness.
